Slow Roast tomatoes

Homegrown tomato glut slow roasted into sweet deliciousness.


Tip: Pick and use small, young courgettes for stir-fries. before they develop large seeds and become spongey.

Ingredients:

Tomatoes, halved or quartered

Dried herbs like dried basil or oregano/marjoram or thyme

Sea salt


Method

  1. Preheat oven to fan 140c

  2. Lay out tomato pieces in a single layer onto a baking tray lined with baking paper.

  3. Coat with olive oil and sprinkle over sea salt and herbs.

  4. Cook for an hour until they are semi dehydrated.
